what's cooking wednesday: corn dog muffins


Today is Whatcha Cookin' Wednesday! Kristin and I are participating in today together again! Actually, we're doing this all summer together, only doing different things every day except Tuesdays for Tried It Tuesday.

So... what did I make? Let me tell you! I made Corn Dog Muffins. They were sooooo good and soooo easy. Below is a step by step that tells you what I did!

INGREDIENTS
Corn muffin mix (I used Jiffy)
1/3 cup of milk
1 egg
2 hotdogs
Muffin tin
Muffin/cupcake wrappers (optional)
Vegetable oil (if not using wrappers)


STEP 1: Either line your pan with cupcake/muffin wrappers or grease the pan with vegetable oil. I decided to do both to see how they turned out. I used the middle 6 slots. The 3 on the left side are lined with vegetable oil and the 3 on the right side are lined with cupcake/muffin wrappers.


STEP 2: Preheat your oven to 400 degrees. This is the same amount that's on the Jiffy box, too!


STEP 3: Mix the cornbread mix, the egg, and the 1/3 cup of milk in a small mixing bowl. You will see the mix look like the picture after the one below. YES, it will be lumpy - that's how you want it if you've never made cornbread before!


STEP 4: Take out two hotdogs and cut them into thirds. I use Oscar Mayer hotdogs because that's what I've grown up on. Have any of you ever seen the wiener mobile?! I saw it on the highway the other day.. too cool.


STEP 5: Once you've cut up your hotdogs, put a spoonful of the cornbread mix in the bottom of the pan. Then, put a 1/3 of the hotdog in the middle. Put another spoonful of the cornbread mix on the top and cover it up. You're only supposed to fill it up to about 2/3 of the way, but mine was a bit over that. I promise, they turned out great still! Do this until all of your batter is used/you fill all the spaces you had prepared. Put the pan in the oven for 15-20 minutes. I put mine in for 17 minutes and they looked perfect (to me)!


Here they are, all done! I had to showcase the cupcake wrappers because I'm obsessed with black and white paisley type print! My shower curtain is this print and my new bags from 31 Gifts is this pattern, too (thanks, Aunt Julie)!




They look funny on the inside, but I loved them. They were almost perfect. I think I could have put them in for another minute or so to definitely cook the mix around the hotdog, but it was good nonetheless.


This was my attempt at a smiley face with a tongue sticking out. I'm a true artist, I know.


I hope you all enjoyed the recipe! It was simple and quick, and would be a great recipe for someone that has children. The kids could decorate (hey... I'm a kid, too!) or just eat them on up. They're awesome hot, and taste just like corn dogs on a stick that you'd buy somewhere else.

  2. This was great! My son and I would enjoy doing this together. Two of his favorite things corn bread and hotdogs! It should be a winner. I'll let you know how it goes.

    1. I LOVE cornbread so I had to make something with it and I eat like a child... so I thought, why not make corn dog muffins?! You'll definitely have to let me know!
